"Unlike other green teas that are often characterized as “grassy” or “bitter,” Hojicha is often referred to as tasting of buttered toast with a smoky and umami finish. The fact that this tea is purposefully savoury does not make it any less pleasing to sip on. After the leaves are harvested, they are heated to preserve their green tea characteristics. After this step, they are then roasted over a fire. This eliminates the bitterness you may expect from other green teas and adds a smooth and smoky flavour.
